WHAT IS AN AIR FRYER AND HOW DOES IT WORK?
The air fryer is a new type of kitchen cooking appliance. An Air fryer has a heating element just above the cooking chamber that radiates heat directly to the food from a close distance.
The radiation heat penetrates deep into the food surface, a large above the heater pulls the air upwards through the cooking chamber creating a strong vertical airflow while passing the heater, the air is loaded with heat energy, and the air is transported downwards through a double wall around the cooking chamber.

The heat reaches all parts of the food even when the food is piled up. The combination of radiation from the top and convention from the bottom creates a heat transfer that is much higher than the convention oven.
Because the food is heated from both sides at the same time, there is no need to turn it during the cooking process. This cooking effect produces a result similar to that of a deep fryer, but without the excessive use of oil.
Cooking in an air fryer requires circulation to keep the heat inside; as the temperature rises, so does the internal pressure. It should be noted, however, that an air fryer has an exhaust system that regulates internal pressure.
The exhaust system uses a small amount of air to create a small under pressure, forcing steam and smoke to exit the cooking chamber only through the exhaust, where it is filtered before being released into the open air.
